Traditional dishes of Huila
Fish
Thanks to the Magdalena River, is very common to find in this region a variety of fish such as catfish or widower pintadillo bocachico.
Roast Huilense
In times of San Pedro, one of the most representative celebrations, one of the typical dishes is roast Huila, a mixture of Spanish cuisine with indigenous. The dish is made with tender pork tenderloin and accompaniment bland, rice arepa, wrapped and cooked cassava.
Achiras
They are about 3 cm biscuits that are traditionally served with chocolate and breakfast. Its base is achira meal with fresh curd, butter, egg yolks and salt.
Tamal Huilense
The tamal is a dish of many departments of Colombia, but everyone has their own variation. This is a mixture of stew that includes pork, beef, chicken and egg, a small amount of rice, green peas and is wrapped in banana leaves which are passed through the heat to give the consistency needed to tamale.
Juan Valerio
It is a of the most popular and well known department recipes. Its basis is the mixing mashed banana as a single meal with onion and bacon without skin. It is fried and served as an accompaniment to other foods.
